It is generally used as a substitute for cornstarch, which is highly processed and difficult to source in non-GMO varieties. Arrowroot is most commonly used as a thickener for sauces, gravies and gels; it’s well known for its use in crystal clear fruit glazes and jellies. Because arrowroot powder thickens at lower temperatures than other vegetable starches, it is far less likely to burn, and it will thicken even in the presence of acidic fruits, making it the thickener of choice for fruit glazes.
For the best success with arrowroot powder, be careful not to overheat it. Add a slurry of arrowroot powder and tepid water to the liquid you wish to thicken. Heat until the mixture is thickened and remove from heat. Do not put arrowroot powder directly into hot liquid. The starch will absorb too much liquid at once, resulting in clumps and uneven consistency.
To substitute arrowroot for cornstarch in your favorite recipes, use two teaspoons arrowroot powder for one tablespoon of cornstarch. Use one teaspoon of arrowroot powder for every one tablespoon of a grain-based thickening agent. In baking, you can also substitute it for coconut or almond flour when you prefer a more neutral taste. It helps lighten the density, resulting in lighter, airier gluten-free baked goods.
